'New Meal Prep Video - High protein & moderately low carbs! Did you think I was gone, like it or not, I’m back!! And I have a bunch of new meal prep plans, recipes, and ideas that I can’t wait to share! As I get back into the swing of things, like recording and editing it may take a few videos to get the feel and all that back, so just bear with me. The biggest thing I struggled with before recording and launching this video… The videos will get better, I think it definitely could have been better but didn’t want a few mistakes to stop me from posting the video. Meal breakdown and nutritional info for each meal are below!  Groceries - La Banderita Carb Counter Tortillas - 5-6 Boneless, Skinless Chicken Breasts - 2 lb.96% Lean 7% Fat Ground Beef - Deli Turkey - Light Mayo with Olive Oil - Hearts of Lettuce - Cherry Tomatoes - Bell Peppers (Green, Orange, Yellow) - Brown Rice (Trader Joe’s Organic) - Light Shredded Mexican Blend Cheese (Trader Joe’s) - Quest Protein Chips (Ranch & Chili Lime) - Montgomery Inn BBQ Sauce - Light Creamy Ranch - Extra Virgin Olive Oil   Cooking Instructions Shredded BBQ Chicken Recipe (how I should have done it) 1. Trim any excess fat from chicken. 2. Turn stove burner to medium-high heat and add a 1-2 tbsp Extra Virgin Olive Oil. 3. Once the pan is hot, add the chicken breasts and season with Salt, Pepper, and Smoked Paprika. Or use any seasonings you prefer. 4. Cook for only 1-2 minutes per side, just getting a quick sear on the chicken. 5. After searing each side, add the chicken to a slow cooker or instapot. 6. The add you’re BBQ Sauce. Could also add a splash of Chicken Stock if you wanted to make it even more moist and reduce chance of drying it out. 7. Then I usually just cook it on low or medium for several hours, if I have the time. To cook it faster, you can cook it on medium or high heat for less time, just don’t let it dry out. In the video I did high because of wanting to speed up the cooking process. 8. And then I just check it every 45 min - 1 hour, till chicken is cooked all the way through. Last thing I do is shred the chicken breasts and mix it all up .   My Meals  Beef, Rice and Veggie Bowls - 6 oz. Lean Ground Beef  - 3/4 cup Peppers - 1/2 cup Brown Rice - Side of Shredded Cheese (little less than 1/4 cup) Protein(g): 49 Carbs(g): 30 Fat(g): 19 Total Calories: 492   Shredded BBQ Chicken Wraps (3 Lettuce wrap meals) - 6oz. Chicken - 3/4 - 1 cup Cherry Tomatoes - 2 pieces Lettuce  - 1 Bag Quest Protein Chips - Side of Shredded Cheese (little less than 1/4 cup) - Side of Light Ranch (about 1 - 1/2 Tbsp.) Protein(g): 64 Carbs(g): 25 Fat(g): 16 Total Calories: 495   Shredded BBQ Chicken Wraps (2 Tortilla wrap meals) - 6oz. Chicken - 3/4 - 1 cup Cherry Tomatoes - 1 Low Carb Tortilla - 1/2 Bag of Quest Chips (will eat the other half later for snack) - Side of Shredded Cheese (little less than 1/4 cup) - Side of Light Ranch (about 1 - 1/2 Tbsp.) Protein(g): 60 Carbs(g): 26 Fat(g): 14 Total Calories: 465   Her Meals 2 Turkey wraps - 2.5 oz. deli turkey - 1 Low carb tortilla - Lettuce - 1 tbsp. Mayo and a little Mustard - 1 tbsp Light Shredded Cheese - 1 Bag Quest Protein Chips Protein(g): 39 Carbs(g): 19 Fat(g): 10 Total Calories: 311   Shredded BBQ Chicken Lettuce Wraps - 3.8-4 oz chicken - 5-7 tomatoes - 1 piece Lettuce  - 1 Bag Quest Protein Chips - Side of Shredded Cheese (about 1- 1 1/2 Tbsp.) - Side of Light Ranch (about 1 - 1 1/2 Tbsp.)
